You can change the Avatar & Chat Bubble image (you can even use a gif!) but you can’t change these independently of one another, currently.
Whatever you change the Avatar to in the Widget Style settings of each bot will update both the avatar in the chat widget, and the actual chat bubble icon.
We do have plans to separate these out in the future, so stay tuned!
